Black Olive Cola

Makes 6 sodas

  • 1/2 quart pure brown cane sugar
  • 1 star anise
  • 1 orange peel
  • 1 quart (3 12-ounce jars, drained) pitted black olives, such as kalamata, puréed
  • 6 black olives, such as kalamata, for garnish
  • 6 peels from an orange for garnish
  • Sparkling water

In small pot over medium high heat, bring 1/4 quart of water to a light boil. Add cane sugar and stir to dissolve, about 2 minutes. Add star anise, orange peel, and kalamata purée, simmering for 1 minute more. Remove from heat and using a chinois, strain into a bowl to cool.

Distribute cooled syrup evenly in 6, 12-ounce glasses filled with ice. Top with sparkling water, and garnish each with a skewered kalamata olive and an orange peel.

Note: If you don’t have a chinois, you also can use a fine-meshed colander.
