Easy Shrimp Pasta Salad

- 1 lb. large cooked shrimp
- 8 oz penne pasta, prepared as directed on package
- 1 garlic clove, finely chopped
- 2 tomatoes, deseeded and diced
- 8 basil leaves, julienne
- ½ cup extra virgin olive oil
- ½ cup Parmesan cheese, grated
- Salt and fresh ground pepper to taste
In a bowl, add the pasta, cooked shrimp, garlic, tomatoes, Parmesan cheese, extra virgin olive oil, and basil. Mix; add salt and pepper to taste. Garnish with a basil leaf.
