Grilled Cheese Pita with Mustard and Apple Butter

4 servings (4 sandwiches)

  • 2 (5 or 7-inch) whole large pita breads, sliced around perimeter and split open
  • 1 tablespoon apple butter
  • 1 1/2 teaspoons Dijon mustard
  • 1 (4-oz.) package shredded extra-sharp cheddar cheese
  • 4 teaspoons olive oil

Spread apple butter on one side of each pita and mustard on the other. Sprinkle a portion (about 1 oz.) of cheese on each pita bottom; top with remaining pita. Halve each sandwich so they can be toasted all at the same time.

Heat a large 12-inch skillet over medium heat. Brush top side of each sandwich with olive oil. Place each pita, oil side down, in skillet. As pita toasts, brush remaining sides with oil. Cook until crisp and golden, 2 to 3 minutes per side. Serve.
